The perfect salad?
I've just discovered one of my neighbours has a fig tree, already I am greedily thinking of summer and all the great ways to eat figs. Is it wrong to covet thy neighbour's figs?
This salad is one of my favourites. Easy to prepare and only 4 core ingredients. It calls for the freshest figs and salad leaves and the best buffalo mozzarella and proscuitto you can find. Finish with a splash of lemon juice and extra virgin olive oil and your done. It lifts the spirits and calls for a wine which is able to refresh and lighten. Something white, crisp and youthful comes to mind. Any suggestions?

Mmmm figs, can't help but recommend a fresh young Loire valley wine, it's perfect with goat's cheese, why not mozzerella? Covet away.
I'll take a bet each way here, an Albarino that is quite warm would work well with the fig or Pinot Grigio.
I think its fine to nick a few figs...just don't get caught!
