Recipe for mango salsa

Before the recipe, some mango trivia.

The most common mango grown and sold in Australia is the Kensington Pride. It's not grown commercially anywhere else and its arrival in Australia dates back to the late 1800's.

Mangoes contain a number of interesting substances. The sap and the skin contains urushiol, which is also the irritating and allergenic substance found in poison ivy. Surprisingly and supposedly, mangoes also possess lactase. The lack of this enzyme is of course the reason why some people fart and bloat some hours after drinking milk. (I am in the process of conducting an non blind, N of 1 clinical trial. . .)

Recipe for Mango salsa.

Ingredients:

  • 1 mango - skin removed and diced
  • 1 red chilli - finely diced
  • 1 small handful of coriander leaves (or mint leaves)
  • 1 quarter of a red onion - finely diced
  • juice of half a lemon (or equivalent amount of lime juice)
  • 30mls of extra virgin olive oil
  • A shake of pepper
How:
About an hour before you need it, combine all the ingredients, gently toss and set aside.

wait - so if you eat mango with your dairy products, even the lactose intolerant should be fine?

Neil,

I think so (based on the anecdotes and my own 'clinical experiement'). Though when I was looking to see if Mangoes really contain lactase - I had trouble finding a reputable reference (though it is mentioned in Wikipedia).

Combining it with BBQ chicken sounds inspired! I'm glad it worked. Did you use mint or coriander?

Coriander - the primary herb I had been really really missing while we were in Europe over the holidays. Ah joy!

My mint is all a bit bbq-ed in the sun on my deck at present! It needs some serious watering before I'll be consuming it again!

Actually, I made another version of this last night which I'll blog about later today!
